Coconut Pineapple laddo
Mouth watering sweet add sour ladoos

Heat a pan and add pineapple + 3/4 cup sugar, and water. Mix well and simmer for 5-7 mins(medium flame) with lid covered. Cook pineapple completely. Then blend the pineapple and make puri.

In another pan, on slow flame lightly roast coconut flour, must take care here, it is too sensitive to burn. Just wait for coconut's aroma to release.

Then add ghee, mix properly and add remaining 1/2cup sugar. Now add pineapple puree and cook for 2-3 mins, so that sugar will dissolve completely and it will be thick lumpy texture of mixture. Mix nuts on this stage.

Remove from heat and let it cool completely. Make ladoos and store in refrigerator for upto 20-25 days.
