Ingredients

  1. 1 1/2 cupswhole wheat flour
  2. 1 1/2 cupsrolled oats
  3. 1/2 teaspoonbaking soda
  4. 1/2 cupunsalted butter
  5. 3/4 cupbrown sugar
  6. 1/4 cupcanola oil
  7. 1 teaspoonvanilla extract
  8. 2eggs

  1. 1

    Preheat oven to 375 degrees Fahrenheit! Gather 2 large baking sheets.

  2. 2

    In a large bowl combine the flour, oats, baking soda and salt.

  3. 3

    In another large bowl cream the brown sugar, oil, and vanilla extract. Add the eggs, butter and beat until smooth. Mix with the dry ingredients and churn with a wooden spoon.

  4. 4

    Use a cookie or ice cream scoop place dollops of cookie dough onto the baking sheet, you may need to reform the balls by hand.

  5. 5

    Bake for 10-12 minutes and leave on racks to cool.
