Simple Charro Beans

To go with a good plate of arrachera, I swapped out chorizo for chistorra just to see if it would change the flavor. I use very little salt since the cured meats are usually salty and the beans are already seasoned. Feel free to add more salt if you like, or leave it as is.

Pour the can of ranch-style beans into a pot and add three times the can’s volume of water. Simmer over low heat.

In a skillet, fry the bacon, turkey ham, and chistorra or chorizo until browned.

When the beans start to boil, add the meat mixture to the pot and let it simmer for a few more minutes.

Add the diced tomato, chopped onion, and cilantro to the beans.

Finally, add one or two chipotle peppers, depending on how spicy you want it. If you don’t like spicy food, you can leave them out.
