Vegetarian Napa Cabbage Soup with Straw Mushrooms
A simple dish for vegetarian days. Perfect for two meals for one person.

Trim the mushroom stems, soak in diluted salt water, and rinse well.

Sauté the white parts of the green onions (chopped) until fragrant, then add the mushrooms and seasonings. Add enough water for soup and the carrot. Bring to a boil, skim off any foam, then add the napa cabbage. Adjust seasoning to taste. When it comes to a boil again, turn off the heat.

Ladle into a bowl and top with black pepper, green onions, and cilantro. Enjoy!
