Ingredients

7-10 minutes
Serves 2 servings
  • 3large eggs
  • 3cherry tomatoes
  • 1green chili pepper and 1 red chili pepper
  • 1 tablespooncooked corn kernels (about 15 grams)
  • 1 tablespoonjulienned carrot (about 8 grams)
  • 1 teaspoonground black pepper
  • 1/2 teaspoonsalt
  • 1 teaspoonchili powder
  • 1 tablespoonchopped onion (about 10 grams)

Steps

7-10 minutes
  1. 1

    Crack all three eggs into a bowl. Add salt, black pepper, and chili powder, then beat until well combined.

  2. 2

    Chop all the vegetables into small pieces. Add them to the eggs and mix well. Microwave for 5 minutes.

  3. 3

    Once cooked, cut into pieces and serve with steamed rice.
