Steps

Firstly, take the potatoes and rinse well in water. Then peel them. Then slice the potatoes. Before slicing, you can remove the top and bottom part of the potato to get a square or rectangle shaped potatoes.

Then begin to cut them in sticks.

Take cold water in a bowl and dunk the potatoes in it. Keep this bowl outside or in refrigerator for 30 mins.

After this drain the potatoes.Now, Rinse the potato with run water. Drain them.

Then place them on clean kitchen cotton napkiln and press the napkin, pat and dry the potatoes.

The potatoes have to be completely dried before you begin to fry them.

Now,heat the oil in a pan.

When oil is hot then add the potatoes in the oil. You can fry in 2-3 batches. Don't over crowd the pan.

Stir often while frying.

Fry till the potatoes get cooked but they should not brown from outside. Light brown edges is fine.

Place the fried potatoes on paper kitchen towel. Press it to remove extra oil.

After cooling, again fry the potatoes in hot oil on high flame. Stirring continuesly.

Remove with a slotted spoon. Place French fries on a paper tissue to remove extra oil.

Take the French fries in a bowl. Sprinkle with some salt,oregano and red chilli flakes or you can add your choice of herbs and spices.

Gently shake and toss the bowl so that the salt and herbs etc. mix well with French fries.

Serve,frech fries hot with some any dip or sauce of your choice.....
