This recipe gives you a 2kg very spongy cake, we wanted it very colorful for Christmas, you can use this and decorate any other way you want, not recommended for fondant cakes since it can break very easily.

This recipe gives you a 2kg very spongy cake, we wanted it very colorful for Christmas, you can use this and decorate any other way you want, not recommended for fondant cakes since it can break very easily.

Prepare tin by applying a little margarine and sprinkle with flour
Set oven to preheat, I usually put mine at 200 as I prepare the batter.
Melt the margarine and keep it warm
Whisk the eggs and sugar until they are stiff and doubled in size,add the melted margarine and vanilla essence. whisk a little more.
Add the flour and fold in, I do it in two halves, you need to be careful and fold gently.. - 2
NB:This recipe doesn't need baking powder or soda, the eggs act as raising agents. Divide the flour into two 1kg tins if you want to get height or use one 2kg tin.

Bake for 50-60 mins or until a tooth pick inserted in the middle comes out clean

BUTTERCREAM :icing sugar 100g, butter/margarine 250g vanilla essence 1tsp

Whisk butter/margarine until white and fluffy, add vanilla essence, then add icing sugar little by little until you get desired consistency

Divide and color to your desire then decorate your cake.
