Ingredients

4 servings
  1. 500 gpotatoes (use either normal or baby potatoes)
  2. For the coating:
  3. 1 tbspgarlic paste
  4. 1 tspred chilli powder
  5. 2 tbsptomato sauce (ketchup)
  6. 1/2-3/4 tspsalt
  7. 2 tbspcornflour
  8. 1-2 tbspwater
  9. oil for deep frying (if deep frying)
  10. 3 tbspoil (if shallow frying)
  11. 1 tbspsesame oil
  12. 4-6garlic finely sliced
  13. 1-2green chillis sliced
  14. 1 tbspfinely sliced ginger
  15. For the sauce:
  16. 2 tbsptomato sauce (ketchup)
  17. 1 tspred chilli powder
  18. 1 tbspvinegar
  19. 2 tbspwater
  20. 2 tsphoney
  21. 1/4 tspsalt
  22. 1 tspcoarse pepper powder
  23. 3 tbspchopped fresh coriander or spring onions or both
  24. 2 tbsproasted sesame seeds

Steps

  1. 1

    Boil the potatoes. If you are using big potatoes, let them cool and then cut into chunks or wedges.

  2. 2

    Heat oil for either deep frying or shallow frying.

  3. 3

    Put the coating ingredients (tomato sauce, salt, cornflour, water and chilli powder) in a bowl. Mix the ingredients.
    Add the potatoes and mix gently to coat the potatoes.

    When the oil is hot fry the potatoes in batches till they are light golden brown. If you are shallow frying them, keep on stirring occasionally so that the potatoes do not stick to the pan. I prefer to use a non stick pan.

    Keep the potatoes on the side till required.

    Mix the ingredients for the sauce(tomato sauce, honey, red chili powder, vinegar, water) in a bowl.

    Heat sesame oil in a wide pan over high heat.

  8. 8

    Add the chopped chillis, ginger and garlic. Stir fry for a few seconds.

  9. 9

    Add the sauce and potatoes and toss for minute or two.

  10. 10

    Just before serving, garnish with the sesame seeds and chopped spring onion/ coriander.

    Tip: If you like you can stir fry chopped onion, chopped ginger and cashew nuts before you add the fried potatoes and sauce. If the sauce becomes too thick add about a tbsp of water.
