When I feel like having something tangy spicy and easy and simple soulful meal, then I think of Curd Rice. In my Recipe I have given a healthy twist by using Quinoa. This goes best with chunky Sweet and Sour Date Chutney and fried Chilli. This recipe origination is from South of India with the mix of Western ingredients.

Ingredients

10 minutes
3 servings
  1. 1 cupQuinoa
  2. 2 cupswater
  3. 1.5 cupsour curd
  4. 1 cupmilk
  5. 1 tspginger, finely chopped
  6. 2 sprigCurry leaves, finally chopped
  7. 1chilli, finally chopped
  8. Ingredients for Garnish:
  9. Pomegranate arils
  10. Sweet Corn
  11. Fried peanuts
  12. Ingredients for Tempering:
  13. 1 tbspoil
  14. 1 tspMustard seeds
  15. 1 tspCumin seeds
  16. 1 tspToor dal
  17. 1 tspUrad dal
  18. 1/2 tspAsafetida
  19. Few dry Chilli
  20. Ingredient for - Sweet and Sour Dates Chutney
  21. 1 cupDates soft and very sweet, chopped
  22. 3/4 cuptamarind, soaked in 2 cup water
  23. 2 tspchilli powder
  24. 1 tsproasted cumin powder
  25. 1 tbspginger powder
  26. 1/2 tspcoriander powder
  27. Black salt as required

Steps

10 minutes
  1. 1

    Wash the Quinoa and add it to the boiling water with some salt. This will take approx. 8 minutes to cook. Ones the water is absorbed, switch off the flame.

    Add to this the chopped ginger, chilli and curry leaves. With the help of fork, mix the quinoa and cover it with lid for 5 minutes. After minutes again with the help of fork, mix the quinoa so that it does not be sticky.

    Now add milk and mix again. Next add the curd and salt and mix again.

    Tempering:
    Heat oil in a pan. Add mustard seeds and then all the others along with curry leaves and dry chilli.

    Pour this tempering over the Quinoa and garnish with pomegranate and corn.

    Squeeze the pulp of tamarind. In a pan, add the pulp and allow it to boil. To this add all the spices powder and cook for further two minutes. Then add the chopped dates and leave it on sim for 5 minutes. Check the seasonings as per the taste. Add black salt and roughly smash the dates. Allow it boil and thicken to your required consistency. Store the sweet and sour Dates chutney in an airtight container in the refrigerator. This can be used for Chapathi or Paratha or chat.
