Ingredients

  1. 1large eggplant
  2. 1 tablespoontahini (or sesame seeds or any nut butter)
  3. 1/2 teaspooncumin
  4. 1/2 teaspoonpaprika
  5. 2 tablespoonsolive oil
  6. 2-4 teaspoonslemon juice (or vinegar if I don't have lemon)
  7. 1-1.5 ounceswalnuts
  8. salt and pepper to taste
  9. 2 clovesblack garlic*
  10. 2-3 teaspoonsnutritional yeast*
  11. 1/2 teaspoontandoori spice or another spice I have on hand*
  12. cayenne pepper for a spicy kick (for those who like it)*

Cooking Instructions

    Wash the eggplant, cut it in half lengthwise, and make some cuts in the flesh without cutting through the skin.

    Place them in a microwave-safe container. I use a Lékué container and cook in the microwave on high for 12 minutes.

    Let it cool a bit, then use a spoon to scoop out all the eggplant flesh, place it in a blender or food processor, and discard the skin.

    Add the rest of the ingredients to the processor and blend until you have a thick paste.

    You can eat it right away or let it chill in the fridge; it keeps well for about 4 days.

Me encanta cocinar pero me estresa mucho porque te pasas horas cocinando para comértelo en 5min, no es justo. Supongo que lo disfrutaré mucho más cuando me jubile...y me quedan aún unos 30años jajaja! Supongo que el gusto por la cocina me viene de mi madre que siempre ha cocinado absolutamente todo lo que hemos comido en casa, mermeladas, carne de membrillo, encurtidos, todo tipo de repostería, mil y un guisos, couscous (mi favorito), hasta hace queso fresco últimamente. Creo que nunca nos puso en el plato preparados de estos de calentar y listo. Cuantas más cosas hago de las que ella suele hacer, como la carne de membrillo, más la idolatro, no sé cómo hacía antes para hacer esas cosas y encima trabajar fuera casa, dentro de casa y cuidar de toda la familia. Las madres y sus superpoderes. Intentaré ir pidiéndole recetas y subiéndolas. La foto de perfil es de las flores de azafrán que tienen mis padres en el huerto, hasta eso es casero!
