Ingredients

45 minutes
6 servings
  • 2large yams peeled and cubed
  • 8potatoes peeled and cubed
  • 1onion diced
  • 2 clovesgarlic minced
  • 1 inchginger chopped finely
  • 3tomatoes diced
  • Curry powder
  • Cayenne pepper
  • Fresh bunch of Dhania/corriander/cilantro
  • 2carrots sliced

Steps

45 minutes
  1. 1

    Fry your onions and dhania stems. Add in the garlic and ginger. Put in your spices. Add in the tomatoes.

  2. 2

    Allow the tomatoes sauce to cook down to a thick paste. Season with salt. Add in your yams and potatoes and add in water. Let it cook on low heat for about 40 minutes.

  3. 3

    Add in the carrots and dhania leaves. Let it simmer for 5 minutes.

  4. 4

    Serve hot and enjoy!
