YUMMMMMMYYY! Ok, so we finally got the Instant Pot. This is probably my favorite recipe using this appliance. I'll NEVER make ribs on the grill again!!!!

Mix the dry rub, if you didn't get store bought. I usually keep some in the cabinet in a shaker container that I picked up at the dollar store. My mix works pretty good on pork or chicken (usually spices for pork or chicken work well for either)

Rinse and pat dry the ribs. It's important to dry meat before adding a dry rub, whether it's steak, chicken or pork.

Taking a sharp parring knife, cut slits in the fat about 1/2" apart down the length of the rack of ribs. This is important to open up the fat on that side and allow the seasoning to get inside and allow the fat to carmelize rather than insulate the meat.

Sprinkle the dry rub over one side and pat and smooth over the ribs. Do the same on the other side. It's not a bad idea to allow the ribs to stand for about an hour to let the seasoning set into the meat.

Place the ribs, standing up and ring around the inside of the Instant Pot. Pour in your can of soda/beer/juice.

Set the Instant Pot on high and the timer for 25 minutes. Let it do it's thing.

Once the cycle is complete, carefully open the top and, using tongs, carefully remove the ribs and place on a cookie sheet. Usually my ribs are falling apart at this point, so be careful to remove them in one piece.

Coat the ribs with your favorite barbecue sauce and place in the oven on broil for 5 to 10 minutes just to carmelize the barbecue sauce and brown the ribs.
