Ingredients

  1. For the dough:
  2. 3 cupsall-purpose flour (about 375 grams)
  3. Pinchsalt
  4. 1 tablespooninstant yeast
  5. 1 tablespoonsugar
  6. 1 1/2 cupswarm water (about 355 ml)
  7. 1/4 cupcorn oil (about 60 ml)
  8. For the filling:
  9. 1large chicken breast, cut into small cubes
  10. 3bell peppers, assorted colors
  11. 1medium onion, diced
  12. 3mushrooms, diced
  13. 2 tablespoonstomato paste
  14. Salt, black pepper, and chicken seasoning
  15. 1 cupshredded mozzarella cheese (about 115 grams)
  16. 3 tablespoonscorn oil (about 45 ml)
  17. For the topping:
  18. 1egg yolk
  19. Sesame seeds and nigella seeds

Steps

    In a large bowl, combine all the dough ingredients and knead well until you have a smooth, cohesive dough. Cover and let rise for 1 hour.

    In a skillet, heat the oil and sauté the onion over medium heat. Add the chicken cubes and cook until no longer pink. Add the bell peppers and mushrooms, stirring to combine.

    Add the tomato paste, chicken seasoning, black pepper, and salt. Cook over low heat for 10 minutes.

    Divide the dough into two portions. Roll each portion into a circle the size of your baking pan. Grease the pan lightly with oil and place the first dough round in the pan.

    Spread the filling over the dough and top with mozzarella cheese.

    Place the second dough round over the filling and seal the edges well.

    Brush the top with egg yolk and sprinkle with nigella seeds and sesame seeds. Bake in a preheated oven at 350°F (180°C) on the middle rack for 15 minutes.

    Then place the pie under the broiler for 3 minutes until golden brown. Slice and serve.
