I was away for three days over the weekend visiting my family in Northumberland. While I was away, my husband (left at home with the children), managed not to cook a single vegetable - not even an onion! As a result I have a lot of veg that needed using up. This soup is thick, filling and comforting. You can use 1 or 2 tbsp of curry paste depending on how hot you like your food.

Ingredients

  1. 2onions, chopped
  2. 4carrots, peeled and chopped
  3. 1 headcauliflower, chopped
  4. 2sweet potatoes, peeled and chopped
  5. 1-2 tbspred curry paste
  6. Hot water
  7. 50 mlscoconut milk
  8. 1 tbspoil

Steps

  1. 1

    Fry the onions in the oil for 5 minutes until the onions are starting to soften.

  2. 2

    Add the curry paste and continue to fry and stir the onions for a few minutes.

    Add the chopped veg, give it a good stir and then add enough boiling water to just cover the vegetables. Simmer until the veg is tender and soft.

    Allow the soup mix to cook slightly before blending, then stir in the coconut milk before serving.
