This Tet, I'm eating vegetarian for 49 days in honor of my late father. This vegetarian hu tieu noodle soup is a refreshing change during the holiday when every house is serving meat.

Peel and cut the daikon and carrot into flower shapes, then wash. Soak the straw mushrooms in salted water.

Bring 4 1/4 cups (1 liter) of water to a boil. Add the daikon and carrot and simmer. Add a small piece of rock sugar for sweetness and a bruised lemongrass stalk for aroma.

Heat oil and sauté shallots until fragrant, then add the straw mushrooms and stir-fry until aromatic. Add a splash of soy sauce. Add the sautéed mushrooms to the broth.

Once the broth is boiling and the carrots and daikon are cooked, season with 1/2 tablespoon coarse salt, 1 tablespoon vegetarian seasoning powder, and 1/2 tablespoon MSG. Adjust to taste. Add sliced vegetarian sausage and chopped cilantro for extra flavor.

Heat oil and fry the bean curd skin and tofu until golden and crispy. Serve with the hu tieu noodles for added texture.

Ladle the soup into bowls and serve with bean sprouts and fresh herbs. Enjoy with a side of vegetarian soy sauce and sliced chili. Delicious and a great way to take a break from all the meat during Tet!
