Serves 3 servings
  • 3European plaice fillets
  • Eggs
  • All-purpose flour
  • Salt
  • Olive oil

Steps

  1. 1

    Ask your fishmonger to cut the fish into fillets, leaving the skin on. Beat 1 or 2 eggs, depending on the amount of fish, and coat the fillets in the beaten egg.

    Once the fillets are coated in egg, let the excess egg drip off and dredge them in flour on both sides.

    Heat olive oil in a skillet over high heat. Fry the fillets until golden brown on both sides.

    Once the fillets are golden, remove excess oil by placing them on paper towels.

    Plate the fillets and serve.
