Heat broth, vinegar, sugar and soy sauce in a saucepan

Mix cornstarch with 1 tsp cold water

Whisk cornstarch mix into saucepan mix

Simmer sauce for 5 minutes and set aside

Heat oil in a heavy skillet.

Whip eggs till fluffy

Drain vegetables well and add to eggs

Spoon egg mixture into skillet to form small patty

Turn patty over to brown each side evenly

Serve warm, drizzling warm sauce overtop
