1/4 cupwhite wine vinegar
3/4 cupextra virgin olive oil
1/4 tspsalt
1/2 tsppepper

Peel and seed ripe avocado

Place avocado in a food processor and puree

Add vinegar and mix well.

With food processor running, slowly add oil and seasonings.

Use immediately or cover and refrigerate.
