Gray Peas (Pays) and Bacon

My Husband comes from the Black Country so Gray Peas and Bacon are a nostalgic dish from his Childhood. I bought the peas from a Butchers shop in Wolverhampton, but you could find similar dried peas called something different outside of the Black Country... It seems they can also be called Yellow Split Peas or Carlin Peas...

I have seen a lot of recipes that add extras like onion or seasoning... but for the first go I kept it simple...

Steps

  1. 1

The peas need to be soaked for 24 hours, cover them with plenty of cold water in a big bowl with a lid. You can add the Soda tablet or Bicarb to help the peas soften. Check them a few times and top up the water if it gets low.

  2. 2

Rinse the peas and add them to a large saucepan... then cover with fresh water. They get about 1/3 bigger while cooking so make sure you have room for that.

Turn down the heat to the lowest setting, add the bacon, cover and cook for a further 2 hours... but they could keep warm all day!
