Ingredients

  1. 1 cupolive oil
  2. 2 cupssemolina, fine
  3. 3 cupssugar
  4. 4 cups water
  5. 1cinnamon stick
  6. Cinnamon powder

Steps

  1. 1

    Use a quite big pot to have room for semolina to cook while it will double in time.

  2. 2

    Put olive oil in pot and add semolina. With wooden big spoon stir while oil starts to get hot. Stir semolina quick and all around while it starts to get colour. Keep stirring till it gets a deep brown colour! The more brown, the more tasty, but do not burn it though! Pull the pot off of the fire.

    In another pot, put water, sugar and cinnamon stick. Bring to boil stirring for 2 to 3minutes! Take cinnamon stick out of the syrup.

  4. 4

    Put the other pot with semolina back on low fire and slowly with big spoon, add in the syrup little by little - carefully as the semolina will bubble! Slow fire stirring around quick but carefully till all syrup is in the semolina pot. Stir till semolina starts to unstick from around the sides of the pot, until you have big ball in middle of pot and nothing sticks!

    Pull halva aside off the fire.
