Sweet and sour mix pickle

First rinse and then chop the Gobi to medium florets.

Chop the carrots and shalgam.

Bring 8-9 cups of water to a rolling boil in a deep pot.

Add the Gobi, carrots and shalgam.

Stir and blanch for 2-3 min. Drain the blanched veggies very well.

Spread them on a cloth and keep to dry them in sunlight.

The veggies should have no moisture on them and must be completely dry.

Once the veggies are dried,then add ginger and garlic in a blender.

Blend to a smooth paste without adding any water.

In another pan take two cups grated gud and one cup vinegar.

Keep the pan on stove and stir so that the gud dissolves and add vinegar.

Simmer this gud and vinegar mixture on a low flame.

Cook the mixture till you get 1/2 string gud consistency. Keep aside.

In another deep pan heat one cup mustard oil till it smoking point.

Add the ginger garlic paste and saute on a low flame.

Now add the veggies and 8 tsp salt, 6 tea sponn red chilli powder and 2 tsp split mustard seeds.

Stir very well. Add the gud vinegar solution.

Stir again.Simmer for 8-9 min. on a medium flame.

Allow the pickle to cool down. Don't cover with a lid.

Serve this sweet and sour mix pickle with parathas.
