Ingredients

  • 12 ozegg noodles, uncooked
  • 12 ozwater-packed tuna, drained
  • 2 c.sliced fresh mushrooms
  • 1 cangreen beans
  • 16 ozlight sour cream
  • 1/2 c.light mayonnaise
  • 2 tspDijon mustard
  • 2 tspparsley, fresh, chopped
  • 1/2 tspsalt, or to taste
  • 1/4 tspblack pepper, or to taste
  • 1 c.shredded cheese, cheddar or cojack

Steps

    Preheat oven to 350

  2. 2

    Cook noodles according to package directions, drain, and transfer to a large bowl. Gently fold in tuna, mushrooms and beans. (if you saute the mushrooms beforehand it will cut down on the moisture in the casserole)

  3. 3

    Whisk sour cream, mayo, mustard, parsley, salt & pepper together in a separate bowl; fold into the noodle mixture.

  4. 4

    Spread mixture into a greased 4-quart casserole dish, and top with cheese. Bake until top is golden and bubbly, about 30 minutes.
