My mom doesn’t do recipes, so I decided to finally write this down. A typical Dutch tomato vegetable soup. My mom often makes it a day in advance, since it tastes even better the next day. Vermicelli is optional.

My mom doesn’t do recipes, so I decided to finally write this down. A typical Dutch tomato vegetable soup. My mom often makes it a day in advance, since it tastes even better the next day. Vermicelli is optional.

Mix the minced meat with the garlic powder, paprika, salt and pepper.

Heat a soup pan on medium to high. Add the oil and fry the onions until they’re translucent.

Add the soup vegetables and fry them for a couple of minutes.
- 4
Add the water, tomato juice, stock cubes and bay leaves and bring the soup to a boil.
- 5
Roll the minced meat into small balls and add these to the soup.
- 6
Let the soup simmer for 10-15 minutes.
