A very healthy sabzi of winters...Goes very well with parathe , phulkas and even with dal chaval.
Steps

Boil potatoes and cut in small cube sizes.wash,clean and chopped methi leaves finely and keep aside.

Heat oil and add zeera and mustard seeds.when splutters add cut aloos.Add ginger paste,green chilli slits,salt,haldi, dhaniya,and mix nicely.

Now add finely chopped methi leaves squeezing all the water from it and mix nicely. keep the flame high and keep stirring so that water from methi dries up.now add amchoor powder and again give a mix..

Ur spicy methi aloo is ready to serve

U can use red chilli powder here.But I opted fr only green chilli to retain the beautiful lush green colour of methi.
