Ingredients

  • 8 sliceswhite bread
  • 1/2 cupshelled pistachios (about 65 grams)
  • 1/2 cupshredded coconut (about 40 grams)
  • For the cream layer:
  • 4 cupsmilk (about 950 ml)
  • 1 cupfine semolina (about 160 grams)
  • 2 tablespoonssugar
  • 1 tablespoonorange blossom water
  • 1 tablespoonrose water
  • For the syrup:
  • 1 cupsugar (about 200 grams)
  • 1/2 cupwater (about 120 ml)
  • Juice of 1/2 lemon
  • 1 teaspoonrose water
  • 1 teaspoonorange blossom water
  • 2cardamom pods

Steps

    First, in a saucepan, combine the sugar, water, and cardamom pods. Bring to a boil and let simmer for 10 minutes. Add the lemon juice, rose water, and orange blossom water, and simmer for 2 more minutes.

    In another saucepan, combine the milk, fine semolina, and sugar. Cook over medium heat, stirring constantly, until the mixture thickens. Stir in the orange blossom water and rose water at the end.

    Meanwhile, trim the crusts off the bread slices and toast them in the oven until golden.

    Arrange the toasted bread in a single layer, pour the syrup over the bread, then spread the cream mixture on top. Refrigerate for about 2 hours until set.

    Before serving, garnish with pistachios and shredded coconut, and drizzle with more syrup if desired.
