This is a mildly hot Indo Chinese cuisine and addition of few sauces and stir fried vegetables lends an exotic taste to this rice.

Semi boil basmati rice with 1 tsp salt. Drain the rice and spread it on a plate.Smear little salt and oil.The rice should be sufficiently cold so that the grains do not stick to each other.

Heat oil in nonstick pan.Fry the garlic till golden brown and set aside.Add the chopped onion and all the vegetables and sprinkle little salt.Fry on high flame.The vegetables should not lose their crispness.Leave to fry for sometime without tossing.This gives the rice a smoky flavour.

Add the rice.Toss.Adjust salt to taste.Add all the sauce and taste maker and toss.Add the fried garlic and toss again.Set the rice in a heart shaped mould.Demould upside down on a plate.Serve with stir fried vegetables and schezwan fish.
