Coconut Rice
Steps

Wash 1 cup rice and soak for 15-20 mins.

In a heavy bottom vessel take coconut oil/ghee add mustard seeds

Add bay leaf, cardamom, cloves, star anice and curry leaves, green chillies and saute

Add chopped onions, salt and saute.

Add soaked rice and mix well.

Add coconut milk and a cup of water and cover lid and cook for 5-10 mins on low flame.

Once water dried check whether cooked. If not add some water and cover and let it cook

Ready to serve garnish with fried cashewa.(optional)
