Combine the dough ingredients with orange blossom water without kneading. The dough should be a bit firm. Wrap it in plastic wrap and let it rest for 3 hours.

Blanch the almonds and grind them once, then grind again with sugar. Add honey, a tablespoon of orange blossom water, butter, and the desired flavoring.

Shape as shown in the picture. Roll out the dough well, place the filling, and shape with your hands into a crescent, making sure to remove any air. You can decorate it or leave it plain. Let it rest overnight or at least 6 hours.

The next day, prick it with a fork and brush with butter or a beaten egg to give it a golden color. Bake in a very low oven until cooked and golden brown.
