This is a legendary recipe that's been talked about for ages, haha. I'm not sure where the original recipe comes from, but I can confirm that it really gives you that classic white bread feel—so fragrant and soft, but without any flour! It uses only egg whites and just a little oil. There's hardly anything here to make you gain weight!

Combine the dry ingredients: almond flour, coconut flour, baking powder, erythritol, xanthan gum, and salt. Mix well.

Pour the coconut oil into the dry mixture. Use a mixer or spatula to mix until well combined. Set aside.

Next, prepare the egg whites and lemon juice. Beat the egg whites and lemon juice together until stiff peaks form and the mixture is creamy. This takes about 3–7 minutes with a mixer, or 10 minutes or more by hand (think of it as an arm workout!). Make sure your mixing bowl is completely free of any fat, and be careful not to get any yolk in the egg whites—otherwise, they won't whip up properly.

Once the egg whites are ready, add one-third of the whipped egg whites to the dry mixture you set aside. Mix well (it will look a bit dry at this stage).

Gently fold in another third of the egg whites using a spatula (no mixer needed this time).

Finally, fold in the remaining egg whites, again using a spatula, until the batter is smooth and well combined.

Transfer the batter to a baking pan. Preheat your oven to 350°F (175°C) and bake for about 40 minutes. If using a small oven, bake at 300°F (150°C) for 40 minutes, placing the pan on the lowest rack to prevent the top from browning too quickly.
