Slit plantain from the middle. Sprinkle oil and salt and set aside. In a bowl mix bonnet, chopped carrots, oil, soy sauce and salt. Stuff the bonnet mixture in the plantain. Arrange in a baking tray, sprinkle sesame seeds and bake till brown. I serve mine with cabbage stir fry.
