The crunchiness to the tastesbuds is irresistible!

Slice water leaf, wash well. Leave it in strainer and set aside

Blend tomato pepper, tomatoes and onions. Also slice onions and set aside.

In a pot, pour palm oil, pour onions and allow to heat for a minute. Add the blended veggies. Allow to fry well

Add fresh curry and already deboned smoked fish. Allow to simmer. Remove the fish and pour in the water leaf. Turn it into the stew and allow to cook for some minutes. Turn the fish back and stir. You can also add your choice of meat. But there is a particular flavour that comes from the smoked fish so I stick with it.

This stew can be served with rice, yam, even ball food. But today, I served it with rice.
