Anyway, I charged one of my Hispanic 7 year old students to make a very simplified version of it. Folks? For a somewhat pre-fabed recipe, this was absolutely delicious! A must try once recipe!

Anyway, I charged one of my Hispanic 7 year old students to make a very simplified version of it. Folks? For a somewhat pre-fabed recipe, this was absolutely delicious! A must try once recipe!
Cooking Instructions

Use 2 packets. This really is a great brand! It's avaliable at most any major supermarket.

Pan sear your pork roast on all sides in a slight amount of oil.

Add all of your vegetables and seasonings [except for your sides/garnishments] and simmer covered stove top [fat side up] for 3 hours. You'll know she's done when you can easily pull the bone from your roast. Or, shread roast easily with 2 forks.

Strain all fluids from pork roast but retain them for a delicious broth later in the week.

Shread pork and place in the oven at 425° for 30 minutes uncovered. Drizzle lightly with lard or oil.

My daughter sent me this recipe and it is great. Carnitas is the Mexican version of our pulled pork. This version uses some interesting spices and it cooks in the pork fat. Definitely worth a try. There are other recipes for carnitas, for example slow cooked in chicken broth. I found that the only way to get that authentic Mexican flavor is to use the manteca "lard". Also DO NOT use American style Coca-Cola, it doesn't have the raw sugar the Mexican Coca-Cola has. Hellbound78 -

I concocted my carnita recipe from a few other recipes. All ingredients can be adjusted to your taste. I usually put it in crockpot but I have been known to put in on the grill as well. Some recipes call for added fat but I feel the pork produces enough on it's own it's not needed.Stephanie

This is basically Mexican cornbread using carnitas meat instead of hamburger. Making the carnitas is the only somewhat time-consuming step, which I usually do the day before because I'm old and get tired quicker. But it's really worth the effort and time because this cooking method imparts incredible flavor and tenderness to the pork. If you're questioning the use of lard, or wanting to substitute a different fat (like shortening), do a quick internet search and you'll learn that lard is a lot healthier than previously thought. Use lard.If you don't have picky eaters like I do, you can add some of the garnishes to the cornbread casserole before baking, like the salsa, jalapeños, black olives. Maggie Conlon
