Fish with Garlic Sauce and Green Rice

For the rice: Soak the rice in water for a bit, then drain. Meanwhile, in a blender, combine the onion, 1 garlic clove, the cilantro-flavored bouillon cube, and some cilantro to taste. Blend until smooth.

In a saucepan, melt a little butter and add the rice. Sauté, stirring constantly, until lightly golden. Add the blended mixture and cook over medium heat until the rice is fluffy.

For the fish: Marinate the fish fillets for about 15 minutes with lime juice, garlic salt, salt, and black pepper to taste.

Next, thinly slice the garlic cloves and place them in a bowl. Add chopped cilantro to taste and 2 tablespoons of extra virgin olive oil. Mix well.

In a skillet over medium heat, add the garlic, cilantro, and oil mixture. Stir constantly so the garlic doesn't burn, then remove from the skillet.

In the same skillet, cook the marinated fish fillets for about 5 minutes on each side.

To serve, place the fish on a plate, top with the garlic, cilantro, and oil mixture, and serve with the green rice.
