Steps

Parboil rice, drain rinse and keep aside. Grate carrot, onion and dice ginger and garlic. Add oil in a pot and caramellize the grated and diced vegetables.

Add ur parboiled rice, cumin powder, coriander, black peppercorns, cloves and cardamom. Add salt to taste.and buillon cubes. Add enough stock to cool ur rice. Stir, taste and correct ur seasoning.

Cube ur pineapples and soak ir droed fruits. Wen rice is about to cook add ur soaked dried fruit and cubed pineapple. Stir cover and allow to simmer. Serve hot with any curry, masala or sauce
