Hollow out a funnel shaped hole in each tomato to provide a place for the stuffing. The portions of tomato removed can be used in a salad.

Mix the remaining ingredients and spoon into the tomato cavities.

Garnish with parsley.

Place in baking dish and bake 350 degrees F for 30 minutes or cook over charcoal until done. If necessary cover the tomatoes with aluminum foil to keep the stuffing from browning too much.
