My children love meatballs and I made this last over 5 years ago.

The day before, put your minced meat in a bowl. Add all your spices(coriander, salt, black pepper, Italian seasoning) With your fingers, work the spices into the meat.

Break your egg and beat lightly. Pour into meat and mix in still using fingers. The egg is meant to keep the meat tender.

Roll meat into balls between your hands. The bigger the balls, the longer it will take to cook thoroughly.

Put meatballs in a bowl, cover and refrigerate until ready to use.

Blend your canned tomatoes, fresh tomatoes, peppers, onion and garlic. Chop half onion and set aside.

In a saucepan, add vegetable oil and set on heat. Toss in chopped onion and cook lightly.

Pour in your blended tomato/pepper mix. Add salt, seasoning cubes and parsley. Stir. Drop in bay leaves.

Add your meatballs(I only used about 15 meatballs for this quantity of tomato mix. The rest I stored for use later). Stir gently

Cook on medium heat for 30 minutes then turn down the heat for another 15 minutes.

Your meatball sauce is ready. Serve with spaghetti.
