I love cookies. They make for great snacks. But when I yearn for that same taste yet want something that's more filling, then I do short bread Cookies. They're softer and thick. A perfect midway point between bread and cookies.

Steps

Preheat your Oven to 350 degrees.

In a Food Processor, combine the Flours, Sugar, and Salt. Pulse it a few times to make sure it is blended together well.

Cut your butter into large chunks and add it into the dough. Then, whiz it for one minute. The dough will start to clump together and have a sandy appearance.

Add milk and pulse to make it into a doughy consistency.
Lightly score a board with flour. Place dough and roll out. Cut with Cookie cutter. - 5
Place on greased cookie sheet. Sprinkle simsim on the bread.

Bake for 30-35 minutes until the shortbread has a nice brown color.
