Ingredients

  1. 4potatoes, peeled,1/2 inch cubes
  2. 1 1/2 cupsfrozen peas
  3. 1/4 cupExtra Virgin Olive oil, good quality
  4. to tasteDill weed
  5. to tasteItalian seasoning
  6. to tasteOnion powder
  7. to tasteSea salt
  8. to tasteFresh cracked black pepper
  9. 1/4 cupparmesan cheese
  10. 1/4 cupvegetable broth

Cooking Instructions

  1. 1

    Combine peas and cubed potatoes in a 9 inch aluminum pan

  2. 2

    Add Olive oil and stir in to coat veggies

  3. 3

    Add Dill, Italian seasoning, onion powder, sea salt, and pepper, mix with spoon to incorporate

  4. 4

    Top with Parmesan cheese and bake at 350° for 45mins

  5. 5

    Remove from oven, use spoon to turn over veggies, add veggie broth and bake for 10-15 mins

  6. 6

    Serve and enjoy
