Roast Potatoes

This makes 4 hotel pans of roast potatoes. Can be three. Start two pots of water boiling on stove and preheat convection oven to 400F and regular oven to 450F. It also works well to do this same recipe but put the potatoes in a single layer on a sheet tray. In a single layer you can get away with a hotter oven.

Cooking Instructions

Chop potatoes and carrots. Divide between 4 pans.

Coarsely chop and reserve onions

Parboil one pan of potatoes in pot of salted, boiling water for 10 minutes. The potatoes will cool the water and get back close to 200F by the end of 10 minutes. Internal temp of potatoes should be around 170F after parboiling. Drain potatoes in colander

Add 2/3 cup oil, a quarter of the onions and oregano and black pepper and 1 TBSP salt to each pan

Add potatoes to pan. Mix and put in convection oven for 30 minutes.

Remove from convection oven, mix with spoon, put in regular oven 30 minutes. After they are done, cover with foil and hold in 200F oven.
