Stuffed tomato curry

Take 6 medium size and firm tomatoes. Slightly chop their top and remove their pulp.Preheat the pan for the stuffing and add two tsp oil in it and heat it. Add cumin seeds and saute it.

Add finally chopped green chilli and ginger garlic paste and cook them. Add cauliflower and potato to it. Add turmeric powder., and. Coriander powder and red chilli powder and salt and mix well.

The stuffing has cooked. Keep the stuffing aside to cool down. Stuff the tomato by adding the stuffing in

Preheat the pan to cook tomato.Add 2-3 tbsp oil in it. Place the stuffed tomato to cook on low flame. Cover and cook it on the low flame for 3-4 minutes.

In the meantime prepare the masala mixture. Add 2-3 tbsp oil and heat them. Add cumin seeds and add cinnamon stick 10-12 black pepper and 4 cloves to it.

Add the paste of tomato onion green chilli and ginger, garlic and cashews in it. And cook add add turmeric powder red chilli powder coriander powder and mix well and cook until the oil separates from the masala mixture.

Add 1 tsp fenugreek leaves after crushing in it,the tomato have became soft and they have cook on low flame for 15 mins. The Masala mixture have separated from oil. Add some coriander leaves.

Cover and cook on low flame. Add the cooked tomato in it and again cook it. Garnish with cashew.

Tomato curry is ready.
