It was Ash Wednesday yesterday, and all the soup I have were cooked with meat but man was hungry 🤦♂🤦♂🤦♂🤦♂🤦♂ this PALM OIL RICE came to my rescue after staying almost the whole day without eating 🤣🤣🤣🙈🙈🙈🙈

Firstly, wash your rice with salt and set aside

When the is almost done. Add your smoked fish and dry shrimps. Cover the lid and leave to simmer for about 3-4mins.

Place a pot on fire, add your oil. Heat up a bit and add your onion. Stir fry till it's translucent and pour in your pepper and tomato mix. Stir fry for about 10-15 and add about 3 -4 cups of water. Add your salt, stock cubes, grounded crayfish. Cover and bring to a boil

Stir in your rice. Cover the lid and cook On a medium heat till it's soft to your satisfaction. You can choose to add more water if you feel the rice is still hard.

Stir together and then add your sliced scent leaves, stir together and turn of the heat. Your delicious palm oil rice is ready. Enjoy 😊😍😍.

NB: asking if just didn't season the fish. Yes I didn't cause the fish Already has its own taste plus I didn't want it scattering while stirring the rice hence my reason for add it when the rice was almost cooked.
