Cook all the meats with the spices.

Boil the chiles and blend them with a little salt.

The meat takes about 2 hours to cook. Once tender, remove and shred all the meat.

If using precooked hominy, add it after shredding the meat. If not, add it at the beginning since it takes longer to cook. At the end, add the blended chile and a little more oregano, and adjust the salt to taste.

Serve with lettuce, lime, onion, radishes, and chopped chile pepper.
