Ingredients

Serves 5 servings
  1. 2.2 lbspork leg (about 1 kg)
  2. 1.1 lbsbeef brisket or chuck for shredding (about 500 g)
  3. 3pig's feet
  4. 4chicken leg quarters
  5. 2 cupshominy (about 1/2 kg)
  6. 15cascabel chiles
  7. 4garlic cloves
  8. 1/4onion
  9. 1 tablespoondried oregano
  10. 3bay leaves
  11. salt
  12. 1/2onion, chopped
  13. 1chile pepper, chopped
  14. 1/2 headlettuce, shredded
  15. limes
  16. 1 bunchradishes, chopped

Steps

180 minutes
  1. 1

    Cook all the meats with the spices.

    Boil the chiles and blend them with a little salt.

    The meat takes about 2 hours to cook. Once tender, remove and shred all the meat.

    If using precooked hominy, add it after shredding the meat. If not, add it at the beginning since it takes longer to cook. At the end, add the blended chile and a little more oregano, and adjust the salt to taste.

    Serve with lettuce, lime, onion, radishes, and chopped chile pepper.
