I used to make ‘Curry Doria’ when I had left-over Curry and cooked Rice. It’s quite simple to make. Mix the left-over Curry and cooked Rice, loosely fill a baking dish, cover with White Sauce and some shredded Cheese, and bake in the oven until golden. However, I rarely have left-over Curry and Rice these days, thanks to my family with a good appetite. So I made ‘Curry Doria’ in a different way.

Ingredients

4 servings
  1. 500 gBeef, Pork or Chicken *This time I used Beef Mince
  2. 1Onion *finely chopped
  3. 1-2 clovesGarlic *finely chopped
  4. 1/2Carrot *cut into small pieces
  5. 8Mushrooms *sliced
  6. 1 tablespoonCanola Oil
  7. 1 teaspoonSalt
  8. 1 tablespoonCurry Powder
  9. 4rice bowls Cooked Rice
  10. 1 cupTasty Cheese (Cheddar Cheese) *shredded, you can add grated Parmesan
  11. White Sauce
  12. 40 gButter
  13. 1/4 cupPlain Flour
  14. 2 cupsMilk
  15. Salt & Pepper

Steps

    Preheat oven to 200C.

  2. 2

    Heat Oil in a large frying pan, cook Onion and Garlic until aromatic, add Beef and Carrot, then add Mushrooms. Season with Salt and Curry Powder. Add Cooked Rice and combine well.

    To make White Sauce, heat Butter in a saucepan over medium heat until melted and foaming, add Flour and cook stirring until mixture bubbles. Slowly add Milk, stirring constantly until sauce boils and thickens. Season with Salt & Pepper.

    Lightly oil a large ovenproof dish, place the rice mixture and pour the White Sauce over. Cover with Cheese, and bake for 20 minutes or until golden.
