Ingredients

  1. 2boneless, skinless chicken breast, cubed
  2. 1 pounddry pinto beans
  3. 6 cupssodium free chicken stock
  4. Medium onion, chopped
  5. Bell pepper, chopped
  6. 2 clovesgarlic, minced
  7. 1 tspsalt
  8. 1 tspred pepper flakes
  9. 1 tspcumin seeds
  10. 1 Tbsdark chili power
  11. 2 tsppepper
  12. 4bay leaves

Steps

  1. 1

    Place all ingredients in Instant Pot

  2. 2

    Select Bean/chili setting. Should be high pressure

  3. 3

    Set timer for 75 minutes

  4. 4

    Make sure steam valve is closed

  5. 5

    Start

  6. 6

    After cooking, release steam

  7. 7

    Remove bay leaves, test seasoning

  8. 8

    With potato masher, mash about 1/2 the beans (this will also shred the chicken)

  9. 9

    Serve with corn bread or tortilla chips, salsa, queso fresco, avacado and lime wedges
