Ingredients

  1. For Katoris:
  2. 2 cupsMaida / all purpose flour
  3. 1/2 cupOil
  4. 1/2 tspBaking powder
  5. 1/4-1/2 tspAjwain / Carom
  6. as per taste Salt
  7. 3/4-1 cupUse milk & curd -if baking the katoris
  8. For Vadas:
  9. 1 cupurad dhuli dal / black gram lentil
  10. 1 pinchhing / asafoetida
  11. as per taste Salt
  12. as neededOil
  13. 1Chopped green chilli
  14. as neededLittle chopped ginger
  15. 1/2 tspJeera seeds / cumin seeds
  16. For_Serving:
  17. 2Boiled and chopped potatoes
  18. 1Chopped cucumber
  19. 1Chopped tomatoes
  20. 1 tspRoasted jeera powder / cumin powder
  21. as per taste Salt
  22. 1 tspBlack salt
  23. 1 tspRed chilli powder
  24. 1 tspChaat masala powder
  25. 2 tbspSweet tamarind chutney
  26. 2 tbspGreen chutney
  27. as required Few pomegranate seeds
  28. 1 tbspBoondi a type of namkeen
  29. 1 tbspNamkeen sev
  30. as neededChopped coriander leaves

Steps

    For katoris Take a bowl add maida (all purpose flour) oil, baking powder, ajwain (carom seeds) and salt and mix properly. Add milk and knead the dough.

    Grease the katori mould with oil. Roll the dough into a circle big enough to cover the outer side of the katori mould.

    Preheat the oven at 180°c.

    Cover all the katori moulds.

    Bake them in the oven for about 10-20 minutes or until the outer covering is brown. Allow them to sit on the counter for a while. Once cooled remove from the moulds. And baked katoris are ready for filling.

    For Vadas: Soak the daal for 6 hours in water and keep aside.

    Then take out extra water and add all the ingredients of the bhalle except oil and grind it into a mixture.

    In a kadai heat oil for frying.

    Now take a tablespoon of the mixture on your palm and place it in the hot oil and fry them till golden crisp.

    Now dip them in some water for 1/2 hour.

    For_Curd: Beat the yogurt and add milk and sugar to it.

    Gently squeez water from the bhalle and place them in half of the beaten yogurt mixture.

    For_Serving: Place baked katoris on a clean plate.

    Add vadas in the katoris.

    Add potatoes cucumber and tomatoes.

    Add curd green chutney and sweet chutney.

    Add salt black salt red chilli powder chaat masala powder and roasted jeera powder.

    Garnish Dahi Bhalla with pomegranate seeds boondi sev and coriander leaves and serve immediately.
