Ingredients

2 servings
  1. for dough
  2. 2 cupsall purpose flour(maida)
  3. 1 tspsalt
  4. 1 tspoil (I used olive oil)
  5. for filling
  6. 3medium size potatoes
  7. 2 tbspoil
  8. 1 tsp or to tastesalt
  9. 1 tspfresh pepper ground
  10. 1 tspcoriander powder
  11. 1/2 cupchopped coriander leaves
  12. 1/2 cupspring onion use green and white part both
  13. as neededOil for shallow fry
  14. for gazneesh chutney
  15. 1 cupcoriander leaves
  16. 2 clovegarlic
  17. 1/2 cupwalnut
  18. 2 tbsplemon juice
  19. 1/2 tbspcrushed black pepper
  20. 1 tbspcumin powder
  21. 1 tbspsugar
  22. 1 tspsalt
  23. for chakah
  24. 1 Cupcurd
  25. 1 clovefinely chopped garlic
  26. 3 tbspchopped mint leaves
  27. 1 tbspsalt

Steps

    Make dough by adding oil and water make smooth dough cover and keep dough with a cloth for 15 minutes.Next boil potato and smashed nicely no potato pieces should be seen.

    Next add salt,black pepper, coriander powder,chopped coriander leaves,chopped spring onion,oil and mix well.Make dough into parts and roll round like chapati and half side fill with prepared filling.

    Now cover the other side carefully by greasing water on the sides to get stick and with the help of fork press on the side to give end part looks good and gets stick nicely.Next heat pan spread 2 tbsp olive oil to shallow fry make sure to fry nicely from both the sides dont use too much oil and press on sides to get fry at the ends of bolani.

    Now prepare Gazneesh chutney by taking coriander leaves,garlic clove,lemon juice,cumin powder,crushed black pepper,salt,sugar and walnut grind it make smooth paste and gazneesh chutney is ready.Next for CHAKHA take curd add chopped mint leaves garlic finely chopped and salt and don't beat the curd just mix nicely and serve the delicious AFGANI BOLANI with GAZNEESH Chutney and CHAKHA and enjoy the different taste.
