Add a little oil to a skillet. Chop the onion and cut the potato into small cubes. Cook over low heat until the potato is tender.

Slice the chicken breasts into thin strips.

Add the chicken to the potatoes and onions. Cook over low heat until the chicken releases its juices and is cooked through, then let the liquid evaporate. Add salt and paprika, and keep stirring.

Once cooked, turn off the heat. Dice the tomato and chop the parsley (or cilantro if you prefer). Add them to the chicken and mix well.
