My family and I really enjoy atoles, so today I decided to make this one. I promise its flavor is exquisite.

Here are the fresh ears of corn.

Remove the husks from the corn.

Using a sharp knife, cut the kernels off the cobs.

Here are all the ingredients (the corn has been cut off the cobs).

Bring 8 cups of milk (about 1.9 liters) and the cinnamon stick to a boil.

In a blender, blend the corn kernels in batches. I did it like this: add one-third of the corn and 2 cups of milk (about 475 ml). Blend well and strain. Repeat until all the corn is blended and strained.

When the milk starts to boil, add the blended and strained corn. Stir so it doesn't stick. Gradually add the sweetened condensed milk to taste. I used the whole can.

It turned out truly delicious. Perfect to enjoy with some good bread at dinnertime.
