Rasabali is a very famous traditional Odia sweet offered as Prasada to Lord BaladevJew in Kendrapara , Odisha, originated in the Baladevjew Temple of Kendrapara.It is one of the Chapana(56) bhoga of Jagannath temple, Puri.
It consists of deep fried flattened reddish brown patties of chhena (cheese) that are soaked in thickened, sweetened milk (rabri), garnished with chopped nuts. Just melt in mouth.....very tasty😋😋😋😋

Boil 1lt of milk in a heavy bottom pan. Once it comes to a boil, switch off the flame n start adding lemon juice/vinegar till milk curdles.
Using a strainer drain the water and collect the chena. Rinse it under cold tap water so that there’s no trace of lemon juice in it. Also chena will remain soft. - 2
Put the chena in a cloth n hang it for 10 mins to drain out excess water. Take the chena in a plate. Add semolina, wheat flour,little cardamom powder, salt & 1tsp powdered sugar. Start mashing the chena till it’s smooth. Mash constantly for 10 minutes using your palm. By this, the rasmalai will become very soft. Once it’s smooth, make medium size flatten balls out of it. Keep all the patties on a greased plate.

Now heat oil/ ghee. Deep fry the chena patties over medium flame till nice reddish brown color. Take them out n put over tissue paper to absorb excess oil/ghee.

Meanwhile boil another 1lt of milk in a pan on slow flame till the milk thickens. Then add 4tbsp of sugar n cardamom powder & chopped nuts in it. Also add saffron (soaked in milk). Now add fried hot chena patties in it & again boil for 1 min. By this, the chena patties will soak milk nicely n become soft. Switch off the flame.

Keep this to cool down completely. Then serve garnished with nuts of your choice.
