Chicken, lentil & spinach pasta

Heat oil in medium pan, add garlic, chilli flakes and onions, until onions are translucent, add chicken, stir and cook until chicken has changed colour. Stir in lentils, season, add stock, tomato paste, simmer for 10 minutes or until lentils are cooked and sauce has thickened, add spinach, stir until wilted.

Meanwhile cook pasta as per package instructions, combine pasta with chicken sauce, transfer to large bowl, mix and serve with a sprinkling of parmesan

You could add a cup of white wine and reduce stock to enhance the flavour
